Our bread
The crackle and the crumb
A bánh mì lives or dies by its roll. Ours are baked fresh every morning — thin-crusted, light, with a shatter you can hear from the queue. That sound is the crackle. The soft, airy inside that soaks up the pâté and the juices? That's the crumb.

Doors open
Come while it's warm. Some days the rolls sell out — earlier is safer.
Everything that goes in the roll is made here too — the pâté, the mayo, the pickled carrot and daikon, the nước chấm. Yesterday's bread becomes croutons for the phở. Nothing goes stale, nothing goes to waste.
